MICHELIN Guides Point Of View A major icon of Spains restaurant scene, Zalacan boasts an la carte featuring a number of its historic dishes (Bcaro Don Po with smoked salmon, quails egg and caviar, Tellagorri cod, steak tartare etc), alongside a tasting menu Founded in 1973, in the neighbourhood of El Viso (Chamartin), close to the Paseo de la Castellana, it represents traditional haute cuisine and was the first restaurant in Spain to be awarded three Michelin stars. Having been forced to close its doors as a result of the COVID-19 pandemic, it reopened on 5th July 2021 thanks to the Urrechu group, with Basque chef igo Prez as its gastronomic director. The renewed Zalacain has retained practically the same team as it had before. So, Jorge Losada is still the chef de cuisine, Ral Revilla the sommelier, and Roberto Jimnez is the matre d. The menu still offers iconic dishes such as its famous cod dish, bacalao tellagorri, and consom gele, which are now served alongside newly created dishes and an eight-step tasting menu. The interior of the restaurant has also been subtly renewed, whilst maintaining many aspects of the original decor, such as the orange colour of the walls, and incorporating paintings by Jos Ciria.
